Spicy Sausage and Bean Casserole

Makes enough for 2 good portions

Ingredients

  • 6 butchers Sausages
  • 80g smoked pancetta or 3 rashers of smoked bacon
  • 1 red onion
  • Large clove of garlic
  • 1 tbsp dark soft brown sugar
  • 1 400g tin of chopped tomatoes
  • 1 glass of red wine
  • 1 400g tin of cannellini / borlotti / etc beans
  • 1 200g tin of kidney beans
  • Parsley
  • Crusty bread

Method

  1. Fry Sausages in a big pan until browned. Remove from the pan and cut into halves or thirds
  2. Fry the bacon in the same pan until heading towards crispy
  3. Add the onion, garlic and chilli, fry for a few minutes
  4. Add the sugar
  5. Pour in the tomatoes, wine and 100ml of water
  6. Stir in the beans and sausages
  7. When at the boil, transfer to slow cooker for 30 minutes - 3 hours..
  8. Serve sprinkled with the chopped parsley and bread
