Spicy Lobster (or Prawn) Pasta

Serving

Makes enough for 2 good portions

Ingredients

  • 1 large shallot
  • 1 tsp crushed chilli flakes
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 450g cherry tomatoes
  • 450g picked cooked lobster meat, or cooked large prawns
  • zest of a single lemon
  • salt and pepper to season
  • lemon wedges for garnish
  • 250g Spaghetti / Linguine

Method

  1. Cook spaghetti in a large pan of salted boiling water until not quite al dente
  2. Finely dice shallot
  3. In a large frying pan, melt butter in the oil
  4. Add chilli flakes and shallot to pan and fry until shallot is softened
  5. Add tomatoes and cook until they are soft and juicy (5-8 minutes)
  6. Add lobster / prawns and warm through
  7. Drain pasta reserving a cup of the cooking liquid
  8. Add pasta to frying pan
  9. Stir and cook until pasta is fully cooked, adding pasta cooking liquid as required
  10. Serve topped with lemon zest, with lemon wedges on the side to squeeze over
