Pasta Pomodoro e Pancetta

Makes enough for 2 good portions

Ingredients

  • 80g smoked cubetti di pancetta
  • 1 tbsp olive oil
  • 1 small onion
  • 2 cloves of garlic
  • 200g cherry tomatoes
  • salt and pepper to season
  • good handful or flat leaf parsley
  • 2 portions of spaghetti / penne / pasta of choice

Method

  1. Dice the onion
  2. Mince or finely chop the garlic
  3. Fry the pancetta in the oil in a big frying pan or wok at high heat until it really gets some dark colour
  4. Reduce the heat a little, add the onion and garlic
  5. Get the pasta on to cook
  6. With 5 minutes or so to go with the pasta, add the tomatoes to the frying pan
  7. When the pasta is just about done, strain and add it to the frying pan
  8. Mix, chop and add the parsley
  9. Serve!
