Salmon, Mint and Parsley Pasta

Makes enough for 2 portions
Ingredients
250g pasta (spaghetti, linguine, fusilli… they all work with this one!)
250ml white wine (I'd start with a bottle)
100g hot smoked salmon (it's normally already in flakes)
15g fresh mint
25g curly leaf parsley
3 tbsp creme fraiche
Method
Chop mint
Chop curly parsley
Cook pasta
Reduce 250ml of the wine in a frying pan until its a little syrupy
Add creme fraiche
Mix well
Add salmon
Add mint and parsley
Drain pasta and mix in the sauce
Serve with a glass of wine each!
