Salmon, Mint and Parsley Pasta

Makes enough for 2 portions

Ingredients

  • 250g pasta (spaghetti, linguine, fusilli… they all work with this one!)
  • 250ml white wine (I'd start with a bottle)
  • 100g hot smoked salmon (it's normally already in flakes)
  • 15g fresh mint
  • 25g curly leaf parsley
  • 3 tbsp creme fraiche

Method

  1. Chop mint
  2. Chop curly parsley
  3. Cook pasta
  4. Reduce 250ml of the wine in a frying pan until its a little syrupy
  5. Add creme fraiche
  6. Mix well
  7. Add salmon
  8. Add mint and parsley
  9. Drain pasta and mix in the sauce
  10. Serve with a glass of wine each!
