Spicy Sausage and Bean Casserole
Serving
Makes enough for 2 good portions
Ingredients
2 chorizo style sausages
2 chicken thigh fillets / chicken breast strips
2 rashers of smoked bacon
1 small onion
1 clove of garlic
1 stick of celery
1/2 a green pepper

1 227g tin of chopped tomatoes
175ml chicken stock
150g large king prawns
125g long grain rice
Olive oil
Parsley
Spring onions
Lemon Wedges
Method
Fry Sausages in a big pan until browned. Remove from the pan and cut into halves or thirds
Fry the bacon in the same pan until heading towards crispy
Add the onion, garlic and chilli, fry for a few minutes
Add the sugar
Pour in the tomatoes, wine and 100ml of water
Stir in the beans and sausages
When at the boil, transfer to slow cooker for 30 minutes - 3 hours..
Serve sprinkled with the chopped parsley and bread
