Lemon, Cream and Smoked Salmon Pasta

Ingredients

Method

  1. Grate zest from lemon
  2. Grate the parmesan
  3. Chop the salmon into bite sized pieces
  4. Boil the pasta in salted water
  5. Melt the butter in a large frying pan
  6. Add the lemon zest
  7. Fry gently for a few minutes
  8. Squeeze the lemon juice into the pan
  9. Add the white wine
  10. Boil and reduce until the mixture is syrupy
  11. Add the cream
  12. Add the salmon
  13. Season with the black pepper
  14. Drain pasta and combine with sauce
  15. Mix in parmesan and parsley
