====== Lemon, Cream and Smoked Salmon Pasta ====== ===== Serving ===== Makes enough for 2 good portions ===== Ingredients ===== * 1 large unwaxed lemon * 100g smoked salmon * 25g butter * 1 glass white wine * 200ml single cream * 100g parmesan * salt and black pepper to season * flat leaf parsley to garnish * 250g pasta (Linguine or Spaghetti as favourite) ===== Method ===== - Grate zest from lemon - Grate the parmesan - Chop the salmon into bite sized pieces - Boil the pasta in salted water - Melt the butter in a large frying pan - Add the lemon zest - Fry gently for a few minutes - Squeeze the lemon juice into the pan - Add the white wine - Boil and reduce until the mixture is syrupy - Add the cream - Add the salmon - Season with the black pepper - Drain pasta and combine with sauce - Mix in parmesan and parsley
