====== Salmon, Mint and Parsley Pasta ====== ===== Serving ===== Makes enough for 2 portions ===== Ingredients ===== * 250g pasta (spaghetti, linguine, fusilli... they all work with this one!) * 250ml white wine (I'd start with a bottle) * 100g hot smoked salmon (it's normally already in flakes) * 15g fresh mint * 25g curly leaf parsley * 3 tbsp creme fraiche ===== Method ===== - Chop mint - Chop curly parsley - Cook pasta - Reduce 250ml of the wine in a frying pan until its a little syrupy - Add creme fraiche - Mix well - Add salmon - Add mint and parsley - Drain pasta and mix in the sauce - Serve with a glass of wine each!
