-  * 180g linguine +  * 500g braising steak (or similar) in chunks 
-  * 230g of asparagus +  * 25g plain or corn flour 
-  * 100g peas +  * 2 tbsp mixed herbs 
-  * 1 clove of garlic +  * 1-2 tbsp vegetable oil 
-  * 2 tbsp olive oil +  * 12 (ish) whole shallots 
-  * 1 unwaxed lemon +  * 2 red peppers 
-  * 25g freshly grated pecorino +  * 325ml red wine 
-  * 40g pea shoots+  * 200ml beef stock

-  - Add linguine to boiling water +  - Peel shallots, but leave whole 
-  - Chop asparagus into 3cm pieces +  - Cut the peppers into big chunks (somewhere around 3cm x 3cm)

-  - Rub garlic all over the inside of a mixing bowl +  - Heat oil in a casserole dish, heavy based saucepan or frying pan (note - I use a slow cooker rather than putting the stew in the oven.  Both work.  If you are using an oven, 150c Fan is about right, and then deffo use a pan you can put straight into the oven) 
-  - Add zest from half the lemonthen add all the juice +  - Brown the floured and seasoned beef (in batches if required) 
-  - Add olive oil to lemon juice and whisk together +  - Stir in the peppersred wine and 150ml of the stock 
-  - Drain pasta and veg when cooked, KEEP A CUP OF THE WATER FROM THE PASTA +  - Cook and reduce a little on the hob 
-  - Add to mixing bowl +  - Transfer to oven or slow cooker for 2-3 hours 
-  - Add the pecorino, and toss until all melted +  - Add more stock if the stew starts to look a little dry 
-  - Loosen with cooking water until silky +  - I add baby potatoes and chunky carrots about an hour before serving.  Feel free to add dumplings, or serve with mash, greens etc as desired 
-  - Serve into bowls, then add pea shoots to garnish +  - Garnish with thyme
